Organic amaranth seed.
Like quinoa, amaranth is not technically a grain but is the seed of the amaranth plant. It is relatively high in protein and gluten free.
Amaranth seeds cook up well as a hot cereal or polenta.
For a pilaf, bring 1 ½ cups water and ¼ teaspoon salt to a boil in a medium pot. Add amaranth, reduce heat and simmer, cover until liquid is absorbed, which will be about 20 minutes. For cereal, simply bring 2 ½ cups water and ½ teaspoon salt to a boil in a medium pot. Add your amaranth, reduce heat and simmer, cover for 25 minutes.
